Cashel Blue
It's not a long way from Tipperary to Beechmount farm, home of Cashel Blue, Ireland's original artisan blue cheese. This moist mild cheese is deliciously creamy and tangy, not too salty and very rich. It was first made by Jane Grubb in 1984 and since then has won many awards, including Best Irish Cheese in the World. Pasturised and suitable for vegetarians.
